Is there any documentation on how the alarm system is supposed to work for my '97 Boxster?

The reason I ask is because I want to make sure it's working properly. When I lock my doors using the remote the lights flash a couple times and then the horn beeps once. After a few seconds the dashboard light starts to flash. I've read on this board that if the horn beeps then something isn't closed right, or more probably, a sensor somewhere is bad. Also, I haven't really tried, but what does it take to make the alarm go off? I've lifted the door handles and even given it a little shake but nothing happened.

Correct, if you get a beep then one or more zones are open. The easiest way to diagnose alarm problems is with a PST2 or a 3rd party software like the Durametric Diagnostic Software. Both can pinpoint the exact cause of the alarm fault. The PST2 can reset alarm codes, the Durametric software can not (at this time).

The most common alarm faults are caused by a bad or broken center console microswitch and aftermarket radio installs (that do not take into account the alarm contact).
