Two days ago I was driving through a parking lot when my CEL came on. I stopped by an AutoZone and checked the OBD error codes. The only one I got was P0507: Idle Control System, RPM High. After clearing the code it has not come back. The engine seems to idle fine.

2-3 weeks ago I changed the oil and the spark plugs.

1 week ago I changed the air filter and cleaned the throttle body.

I've driven the car daily since. My first thought was I might have damaged the throttle body.

Anything in particular I should be watching for?

Possible fault cause

♦ Throttle is jammed

♦ Leaks in intake air system

If it does not come back don't worry about it. If it does check for leaks...

Okay so the light came on a couple more times and after 3-5 trips would turn off.

I finally noticed the pattern for when it would turn on. It is only when I have the A/C turned off. After a couple start-stops the light comes on after I start to accelerate. Watching the tach, the RPMs never go over 1,000 while at idle.

Why would the A/C being off cause this error?

Maybe try unhooking the battery so the DME will relearn the idle adjustments.

Maybe the new plugs, filter, and clean TB is throwing it off.

IDK, couldn't hurt to try.

The A.C. (on) demand a extra load from the engine, the idle RPM should be adjusted by the DME. Perhaps there is something wrong with the throttle body, the O-ring behind the body or the rubber intake tube from air filter to body (poorly connected) as wross996TT suggest. If you cant find nothing wrong, a visit to the dealer is the only way to go.
