I'm thinking about buying a front and back strut brace. Do they make a difference in performance? Are they worth it? I see them for around $2-300.

I have a 996 carrera 4 convertible 58 000

The only reason the back end feels a little more skittish is because usually when you turn into a corner the front struts flex slightly before turning, with a strut brace on the turn in is a lot quicker. And while you get used to that your likely to turn in faster and sometimes the back end will come out.

BUT the strut brace is only holding the top of the struts in the place they are meant to be and eliminates flexing from cornering stress, it wont cause the back end to skid out - the only things that can do that are low tire pressure, or knackered rear shocks that have gone solid.
